I start my meal planning on Thursday so this covers half of last week and half of this week.

Dinner – out to eat at Smokey Bones

Dinner – One-Pan Pork Roast with Parmesan Fries (didn’t make from last week)

Dinner – Shepard’s Pie, Buttery Corn Bread

Tuesday

Dinner – BBQ pork sandwiches from the Roast Pork leftovers

Recipe Review – Parmesan-Baked Salmon

This is the first of many reviews of new recipes that we try.  (Hopefully!)

We tried the Parmesan-Baked Salmon and thought it was pretty good.  I couldn’t really taste the lemon juice.  The mayo-cheese mixture was hard to smooth out on the fillet, since it kept sliding around with the spoon.  It just required a little more work than a simple swoosh of the spoon.

I’ve been a cautious of using mayo & Miracle Whip to cook with like that.  While I enjoy those things in salads and on sandwiches, I’ve always been worried that it will taste like a big clump of mayo.  Not the case with this recipe.  It turned out creamy and the cayenne pepper gave it just a little kick.

I made half the recipe since there are only 2 of us and Matthew.  The fillets were big enough to provide Matthew and I another meal.  By the way, Matthew seemed to enjoy it and ate all that we gave him the first night.  The leftovers he ate a little bit.

We served it with a broccoli-cheese rice mix and a tossed salad.

parmesan-baked salmon

1/4 cup KRAFT Mayo Real Mayonnaise
2 Tbsp.  KRAFT 100% Grated Parmesan Cheese
1/8 tsp. ground red pepper (cayenne)
4   salmon fillets (1 lb.), skin removed
2 tsp. lemon juice
10   RITZ Crackers, crushed (about 1/2 cup crumbs)
PREHEAT oven to 400°F. Mix mayo, cheese and pepper until well blended; set aside.

PLACE salmon on foil-lined shallow baking pan. Drizzle evenly with lemon juice. Top with cheese mixture; spread to evenly cover salmon. Sprinkle with cracker crumbs

BAKE 12 to 15 min. or until salmon flakes easily with fork.

Menu Plan Monday

I used to try and participate in Menu Plan Monday. However, the beginning of my week is too busy for me to go to the store. So we go on Thursday. So I’m going to try and do a Menu Plan Thursday instead. Our life has gotten a little difficult lately and I really need to start doing this on a regular basis and stick to it.

Dinner – homemade chicken noodle soup

Friday
Lunch – sandwiches
Dinner – eggs, bacon, hash browns

Saturday
Lunch – club sandwiches
Dinner – Buca di Beppo take-out, salad, broccoli, garlic bread, fruit salad, Oreo cheesecake

Sunday
Lunch – hot dogs, chips, watermelon
Dinner – leftovers from Saturday

Monday
Lunch – sandwiches
Dinner – parmesan-baked salmon, peas, rice

Tuesday
Lunch –
Dinner – hot dogs

Wednesday
Lunch –
Dinner – roast pork, parmesan fries

Menu Plan Monday

Still pregnant. Still waiting. I’m due on the 16th.  *sigh*  I haven’t had a chance to plan our meals yet and I won’t be able to go to the store till Thursday, unless I’m otherwise occupied.

Menu Plan Monday – May 7

Menu Plan Monday

Still pregnant. Still waiting. We’re kind of doing stuff on the fly since this baby could come any day now.

Monday: waffles

Tuesday: spaghetti

Wednesday: Panera. We have a doctor’s appointment and want to walk around the mall to get this baby moving.

Thursday: sandwiches

Friday: grilled salmon, rice medley

Saturday: grilled BBQ chicken, corn on the cob, baked beans

Sunday:  Fuddruckers (lunch), french toast (dinner)

Menu Plan Monday – April 30, 2007

Well, another week has gone by.  Hopefully one of these times I try this, I’ll have it done by Monday.  We are still waiting for the baby to come.  I’m due the 16th, and we’ll see how close to that I am.

Monday:          Hot dogs, pasta salad, corn on the cob, strawberries

Tuesday:         Sandwiches

Wednesday:    Grilled steak, corn on the cob

Thursday:        Sandwiches

Menu Plan Monday

This isn’t complete, but what I’ve done so far. Tuesdays and Thursdays are dojo night for Jon, so we have something simple or leftovers more on those nights.

The weather didn’t hold out, so no grilled chicken. Instead we had Crusty Lemon Chicken. No cornbread either, that will have to wait until this weekend.
